I'm assuming you want ESC [ S O (letter O), not ESC S O (you said it
both ways above). The following works:
set key \5 \27[SO
So does this:
set key \5 \{27}[SO
C-Kermit key definitions are active only in CONNECT mode. The current
version of C-Kermit is 8.0:
